- En un cazo ponemos agua y cuando empiece ha hervir añadiremos una pastilla de caldo concentrado, seguidamente escaldaremos todas las verduras que tengamos congeladas, guisantes, habas, alcachofas y las reservamos.
- Ponemos una sartén con aceite en el fuego para freír las albóndigas y las vamos friendo hasta que las veamos doradas y las reservamos.
- Retiramos el exceso de aceite y añadimos en la sartén el ajo, la cebolla picada y la zanahoria y lo sofreímos todo hasta que nos quede todo bien pochado y seguidamente añadimos el tomate rallado y medio vaso de vino blanco, lo dejamos reducir al maximizo y lo trituramos todo.
- Una vez tengamos la salsa triturada añadiremos las albóndigas y las verduras con una parte del caldo que hemos utilizado para escaldarlas, lo dejamos cocer durante unos diez minutos comprobamos como esta de sabor y si es de nuestro agrado lo retiramos y listo ya tenemos unas excelentes albóndigas.
