  1. Cascar los huevos separando las claras de las yemas. Disponer las yemas en un bol, añadir el azúcar y batir hasta que quede como una crema.

  3. Agregamos las 3 cucharadas de Brandy y mezclamos. En otro bol montamos las claras a punto de nieve.
  4. Vamos incorporando delicadamente y poco a poco las claras, mezclando de abajo hacia arriba de modo envolvente.
  5. Verter el café en un plato hondo. Remojar cada bizcocho en el café por ambos lados (yo solo lo hice por uno porque no conseguí los bizcochos de soletilla), los míos eran más finos y se me deshacían. Pero también sirven.
  6. Forrar el fondo de una fuente con bizcochos y cubrir con la mitad de la crema de queso.
  7. Disponer con cuidado otra capa de bizcochos empapados en café. Cubrirlos de nuevo con la crema sobrante y nivelar.
  8. Con la ayuda de un tamiz (colador), espolvorear sobre la crema el cacao en polvo.
  9. Cúbrelo con papel film dejándolo tirante en el molde para que no toque el tiramisú y dejar reposar en la nevera mínimo 4 horas antes de servir. También lo puedes preparar el día anterior y así estará más asentado 😋.
