  2. Pizca sal
  3. 80 g agua
  4. 1 huevo mediano
  5. 80 g azúcar
  6. 25 g manteca de cerdo

  8. 175 g manteca de cerdo para el relleno

  11. 1/2 litro nata para montar

  13. 1 cucharada mascarpone

  1. Batimos los huevos con el azúcar blanco en un bol.

    Añadimos la mitad de la harina junto a la pizca de sal e mezclamos bien.

    Templamos el agua y añadimos la levadura para disolverla. Después la añadimos a la mezcla de huevos y harina e integramos bien.

    Añadimos el resto de la harina y mezclamos hasta integrar del todo. Por último mezclamos la manteca de cerdo ablandada y amasamos unos 15 minutos hasta tener una masa fina y elástica.
  2. Ponemos la masa en un bol ligeramente aceitado y cubrimos con un paño limpio. Dejamos levar unas 12 horas hasta que triplique su tamaño.

    Pasado el tiempo de levado, engrasamos con aceite la mesa de trabajo y extendemos la masa en forma rectangular con ayuda de un rodillo, estirando bien para que quede bien fina.
  3. Extendemos encima la manteca de cerdo con ayuda de un pincel y enrollamos la masa por la parte más larga.

    Sobre una bandeja con papel de horno, ponemos la masa en forma de espiral dejando una separación de un centímetro y dejamos levar de nuevo hasta que aumente de volumen.
  4. Horneamos la ensaimada unos 18 minutosa 180 °C, en la parte media del horno, con calor arriba y abajo. hasta que esté dorada.

    Cuando enfríe, la vamos a cortar y rellenamos con la nata montada, espolvoreamos con azúcar glass y ya podemos servirla y disfrutarla.
